Brilliant light, golden color. Aromas of stone fruit, Golden apple supported by a rich touch of toasted oak. On the palate, ripe, round, exotic flavors of pineapple and mango complemented by notes of butter and vanilla. Beautiful balance between ripe, luscious tones and fresh, vibrant components. Deliciously soft yet exciting finish.

Pairs well with hearty baked or grilled fish with accompanying sauces, salads with poultry, herb-infused chicken thighs in papillote, as well as shellfish such as king crab legs and lobster.

climate

The climate of Monterey is Mediterranean, tending towards a moderate maritime climate due to the cooling winds from the ocean (the grapes contain slightly more acidity than in Paso Robles). Paso Robles has a Mediterranean climate with warm, dry summers and mild winters. (Chardonnay is riper here than in Monterey).

soil

Grapes from Monterey make up 68%, while those from Paso Robles make up 32%. The soil in Monterey is mainly sandy loam and pebbles, with sporadic granite in the subsoil. The soil in Paso Robles is more dominated by limestone.

vinification

The whole clusters are gently pressed in stainless steel vats. The clear juice undergoes a fermentation process for 2 months in cool conditions. A portion of the wine then undergoes a second malolactic fermentation, which imparts the wine with its buttery character. Another portion is briefly aged in oak barrels before everything is blended again to ensure a complete and beautifully balanced Chardonnay.
